I find quite amusing describing cardinal Hosius as German - as he had Polish herb ("coat of arms"), id est pl:Hozyusz (herb szlachecki), he was a member of szlachta, which in the XVI century strictly identified iself with "Polish nation". In these times ethnicity wasn't considered very important. Of course it's possible to have both categories, which I have done (before that category was changed by an IP-user without any note [1]). - His family was German (in ethnical terms), but he was a Polish cardinal (i. e. a cardinal within Poland). You are of course right in saying that ethnicity was not very important in those days, hence our category system is not very well suited for this.
